My website has a lot of information and I want it to look minimalistic, organized, and easily readable .

Well, first of, use a grid system.

960.gs for example, this will easily make columns for your sites

Then, organize it by relevance, for example, if you want to highlight some contnet, use a bigger font, and on side-notes, use lower.

Let's say relevant uses 16px and regular 12, both sizes are read-able

Organized website is one of the best things to make website more readable. When you want to make your website more readable and minimalistic then there are lots of things to be considered like,

Divide every services in column view and categories it.
Make every element in hierarchy
Clear graphical interface
Also consider letter spacing, compactness of test, good margin

Hope my information gives you good idea to organize your website more readable.

You review the information and see if you could make do without some of them. If you can summarize everything into as little words as possible, then that helps a lot in organizing.
