I think that you've made a mistake asking the public Ken. If there are any good ideas out there I'm sure that someone would rather do it themselves and earn from it than just give it away willy nilly.
That being said, I wish you luck anyway

Personally, I think you should create a forum for a subject that interest you, period. There could be a 1000 types of forums you could start, but in the end, you have to enjoy working one it. You already know what's involved in running a forum, and you shouldn't start a forum expecting to get rich from it. As with any "job" you have to love what you do.

@ anthony: I'm not really looking to start a forum to make money, Im looking to start something that alot of people will join and become big, then maybe later throw up a few ads

Perhaps consider a design / graphics community. After all, look at the talent you have. To reduce your out of pocket expense, and if graphic design or the like is something you enjoy and don't call "work", you could start something related and offer templates / graphics / etc as prize items for contest.
Some of the most popular websites offer freebies as a way to advertise and gain interest. Furthermore, younger, less experienced designers would / will look up to you for guidance, which keeps them coming back. To be sucessful, you have to be a leader in whatever it is you do.
Just a thought as I don't know you personally to know what other skills / knowledge you have.

you got to be interested in what your doing, starting a forum on something you not only know nothing about, but dont care about is stupid.

PFFFT!. No new ideas? If you think all the ideas have been used, you aren't creative enough.
