Privacy Policies, Terms & Conditions.

Throughout the next few months, I will be working on a very large website, as of now I can't give out any information about the project but I have a question.

How do I go about having a privacy policy, and terms & conditions written?
Do I hire a professional to write them for me, and if so would they know exactly what information would be needed?

I don't have much knowledge in this area, so any help would be greatly appreciated!
