It wasn't meant towards freelancing, but my grandfather who was a businessman his entire life always said "If it looks too good to be true, it is." Another one that relates more directly to business (also from him) was "There are two organizations you never try to fool, the mob and the IRS."

From reading around, I think one of the best would be to have a contract. It's like a filter for clients. If you send out a contract, serious clients will gladly sign and send it back. Those clients you should stay away from would just stop communicating. Saves you from trouble later on.

Avoid clients who don't type formally. Example: Using the word "there" as "der".

You will be bound for a difficult project.
