I'll either buy a 8800GTS now, and another one when I get more money, or I could buy 2x 7950GT or something else..

Yeah, but by then the 45nm CPU's will be out, so getting a compatible board like the P35 would be a good but still there's nothing wrong getting a 965P.
I don't see the point getting 2 7950GT's, you can just get 2 7900GS's for lot less and overclock then to the same speed as the 7950GT. The only difference is that they have 4 less pixel shaders.

When will the new cpu's be released? Is it worth spending a lot of money on current high-end components or should I wait a couple of months?

I wouldn't have a clue when there released. Maybe 6 months or so. They'll be released about the same time as DDR3 is released. I'm gonna get my PC now, don't want to wait for it.

cpu: Intel Quad Q6600
ram: Corsair Dominator 2GB
video: BFG 8800GTS
hdd: WD 320GB
case: Antec Nine Hundred
psu: Sirtec 560W or Seasonic 600W if 560W aren't enough..

560 is enough to power a small city, you wont need 600 watts unless you have a RAID 6 configuration (which you dont).

Ya, exactly. You could get away with a 400, but I'd suggest sticking with the 560. No reason to go higher.

In pure wattage, yes, but anything under a 560 probably wont have the number of power connectors needed if he ever wants go get sli.

My gfx card doesn't have a cord going from the power supply to the gfx card. Just runs of my mobo.
