  Old  Best software for designing handbooks/manuals?

I work primarily with non-profit orgs, revamping their basic marketing materials. Most of these jobs are small jobs, and I work mostly with Illustrator CS.

Recently, I was handed a large contract to redesign a 300+ handbook for a national organization. In college, I used InDesign and Pagemaker to do large manuals, but never more than 50 or so pages. Obviously, I can't tackle something like this on Illustrator.

The handbook in question will be composed of huge amounts of textual information, as well as charts, graphs, time-lines and photographs. They've come to me to make it look nicer than it does - a little more elegant than a typical manual.

What are your recommendations for software that can handle this job?
