Scaling to multiple servers is a pain. Only in the most extreme circumstances will you ever need to have a single site on more than one server. Often the first thing done is separating the database to a new server, then you put each site on a different network should your company have more than one. Splitting a single site onto many servers gets complex and requires additional equipment. When I was at Wintrust Mortgage we had a bunch of different servers ranging from a few simple web servers in the DMZ to internal servers and database servers that did more important tasks. We had everything hosted at a colocation a few miles away from the office.

If you don't know about networking you aren't going to be able to get any sort of a server setup working. If you find yourself in this situation you'll either have to hire a networking guy or just learn networking.
Must agree here!

We host our main corporate sites over several servers, remote sql servers, dns servers and web servers, it was required and everything runs like a dream, but the initial setup was hard work and did require a bit of money.

When something goes wrong on another server, it can effect a lot more than one thing.
