Just 'cause they comply to XHTML doesn't guarantee OS/Browser compliance. I also code my work to complete XHTML/CSS and encounter different renderings based on browsers a lot. However, things like DHTML dropdowns and Javascript effects are much more of a hassle...

For example. My DHTML menu for advanced sites will sometimes have to have upwards of 7 seperate configurations because every single browser renders it differently. This means a lot of time spent on different computers/browsers modfying positioning a pixel at a time.
